We are researching "reduction of mineral content and control of physical properties of fish meat for kidney disease patients".Chronic kidney disease is a national disease affecting 8 in 1 Japanese people.Since kidney function is declining in patients with kidney disease, it is necessary to limit the intake of minerals such as potassium, phosphorus, and sodium. is imposed.In particular, fish contains a large amount of these minerals, so it is subject to dietary restrictions. Therefore, in my research, reducing the amount of minerals contained in fish meat increases the dietary choices of kidney disease patients and improves their QOL. intended to improve.At the same time, we will examine how the texture, which is one of the important factors in the deliciousness of food, will change as the mineral content is reduced.
