High hydrostatic pressure treatment(High hydrostatic pressure: HHP)has been adopted in the food industry as a non-heat treatment technology, and has been put into practical use for the purpose of improving the preservation of food and opening the shells of bivalves.In this research,HHPIn order to clarify the effect of treatment on reducing the number of bacteria in oysters, we investigated oysters with shells landed in Hiroshima Prefecture.HHPprocessed.As a result, the number of general viable bacteria in oysters was maximized by HHP treatment.2.0 log CFU/gThe contamination indicator bacteria and Vibrio parahaemolyticus counts were below the detection limit in all samples. HHP treatment can produce high-quality shelled oysters without affecting the texture and appearance of oysters.In addition, it has the ability to reduce microorganisms in oysters.
